Yuzu gets most of the attention in Japanese cooking, and for good reason. But for jam, sudachi is worth a serious look. The two citrus fruits have different acid levels, different zest-to-juice ratios, and different seasonal windows, all of which affect how they behave when cooked with sugar.

The flavour difference

Yuzu is floral and relatively mild in acid. The zest is the most aromatic part, and the juice is used sparingly in most applications because the flavour is delicate enough to get lost under heat. Sudachi is sharper, more insistently citrusy, and holds its character better when cooked. The aroma does not disappear into the sugar the way yuzu can.

In a jam context, this means sudachi needs less zest to make an impact and can handle a longer cooking time without going flat. Yuzu jam is possible, but it requires a shorter cook and a higher zest-to-juice ratio to keep the flavour present.

Pectin and set

Both fruits contain reasonable levels of pectin in the pith and seeds, but sudachi's higher acid content helps the pectin network form more reliably. Yuzu jam often needs added pectin or a longer cook to reach a firm set, which risks overcooking the delicate flavour.

Sudachi jam sets more predictably, which is part of why it works well in a small-batch kitchen where you cannot afford to lose a batch to a failed set.

Seasonality in Japan

Sudachi peaks in August and September in Tokushima Prefecture, which is the main growing region. By October the fruit is past its best for juice, though the zest remains usable a little longer. Yuzu peaks later, from November through January, which makes it a winter preserve rather than an autumn one.

The seasonal gap between the two means a jam kitchen can use sudachi in early autumn and yuzu in winter without the two ever competing for the same slot in the range.

Both citrus fruits have a place in a Japanese jam kitchen. They just belong in different months.
